Knife Skills

Mince, slice, dice, chop, chiffonade, julienne, brunoise... What do they mean??? Learn the answers in this basic knife class: parts of a knife, how to hold a knife, which knife for which task, how to care for and sharpen your knives and tips on what to look for when purchasing a good knife. This class will revolutionize the way you use your most important kitchen tool. Bring an apron, a knife (knives) to sharpen, Tupperware for leftovers and your appetite; we will put our new skills to the test in the preparation of a dinner feast!
Suitable for vegetarians.

This is a cooking class geared towards the real beginner. No question too dumb is our mantra as we spend four nights of basics; how to roast and carve meat/poultry, make gravy, make a stock, make a tomato sauce, different cooking terms, how to hold and use a knife, what is the difference between frying, sautéing, roasting, broiling baking etc.! And of course we’ll put all this knowledge to test in the preparation of food for that evening to share and critique. A hands-on class you’ll learn as you go. Bring an apron and your appetite. Suitable for vegetarians.

Dispel the myth of pie making as impossible! Decipher all those foreign terms; creaming, folding, aerating, proofing, kneading- find out why cakes fall, bread is tough, custard curdles or why your pie crust is like cardboard! Join us for a one day introduction to baking; doughs, cake making; buttercreams, sweet and savory pies, flatbreads and quick breads; always hands-on and enough information to embark on your own baking adventures. Bring an apron and your appetite; we'll toss our salad while our evening meal is baking!  Suitable for vegetarians.

For the adventurous beginner or advanced foodie! Come join us for a week exploration of the different cuisines from around the world. Each class we'll prepare menus from new places and discover the ingredients, methods and techniques from different ethnic cuisines; home made pasta, pho, baklava, gumbo-we’ll explore regional American, The Mediterranean, Asia, The Middle East, Eastern Europe, Greek Islands-(examples) We'll travel far and wide with you setting our itinerary. A hands-on class where we set sail and prepare our evening meal. Bring an apron and your appetite. Suitable for vegetarians.

Pass me the afghan and that bowl of Gumbo! Nothing makes Seattle’s grey, chilly winter more palatable than winter comfort food; Irish Beef stew, Shrimp and home made Andouille Sausage Gumbo, Savory Pot Pies, Tortilla pie, winter salads and casseroles. We’ll also show you how to make large pots that freeze perfect for individual servings and the best basic stocks to create comfort food at it’s finest. You’ll brave the winter night warm from dinner and with lots of recipes to keep you armed against the winter blues. Suitable for vegetarians.

Introduction to spices and herbs: Is it really better to use fresh ground spices and herbs-does it make a difference? YES! This 4 week class will introduce you to common and exotic herbs from all over the world, talk briefly about their origins and then use them to create fun and original dishes for our evening meals. You’ll leave at the end of the week with herb/spice samples, recipes, and with the expertise to distinguish spices and herbs from Allspice to Zatar! Suitable for vegetarians. $35 supply fee payable to instructor on first night of class.

Why does chocolate turn white and streaky when you melt it? What is the difference between, 60%, 70% and is white chocolate really chocolate? It’s pure science and we’ll learn the answer as we make valentines treats. We'll make natural fillings, temper chocolate, make truffles and fill and mold lots of different and unique delights for you to take home. We use high quality milk, dark and white chocolates and all natural ingredients and flavorings to send you off with the best boxed gift of filled chocolates and truffles you've ever had and recipes and know how for you to do it all again at home next year
